INSTANT POT SMOTHERED PORK CHOPS

INGREDIENTS:

4 bone-in or boneless, average cut pork loin chops
2 slices uncooked bacon, chopped
1 tsp dried thyme
½ tsp fine ground sea salt
¼ tsp ground black pepper
1½ tablespoon avocado oil or olive oil
2 cloves garlic, minced
⅔ cup sliced white mushrooms
1 cup beef broth or bone broth
½ tsp onion powder
½ tsp garlic powder
½ cup heavy cream or full-fat coconut milk (for dairy free)
½ tbsp teaspoon fresh thyme leaves 
or minced fresh parsley
      to garnish

DIRECTIONS:
  1. Sprinkle each side of pork chops with thyme, salt, and pepper.
  2. Press Saute and add the avocado oil or olive oil to the inner pot. Heat until the pot shows “hot” on the screen.
  3. Sear the pork chops on both sides for 2 to 3 minutes to just brown the sides in the inner pot. Remove the pork chops from the pot and set aside on a plate.
  4. While still hot add the chopped bacon, minced garlic, and sliced mushrooms to the pot and saute for about 3 to 4 minutes until garlic has softened and bacon is browning.
  5. Add the beef broth to the pot and scrape the bottom of the pot to deglaze. Stir in the onion powder and garlic powder. Press “Cancel” to turn off saute mode.
  6. Add pork chops back to the pot.
  7. Secure and lock the lid. Turn the pressure release handle to Sealing. 
  8. Select Pressure Cook on High Pressure (Normal) and set the timer for 10 minutes for bone-in chops or 7 minutes for boneless chops by pressing the + or - buttons. *Check the chart below for Instant Pot cooking times and more options*.
  9. Once cooking time is done, let the pressure Naturally Release for 10 minutes (don’t touch anything for 10 minutes), then Quick Release the remaining pressure (carefully while keeping face away from steam and hands in protective oven mitts, turn steam release handle to Venting).
  10. Once all steam has released (the pin on the lid will drop and the lid will unlock), open the lid and remove only the pork chops, plate & cover to keep warm. Leave the mushrooms bacon and sauce in the pot and select Saute and heat until bubbling.
  11. Add the heavy cream or coconut milk to the sauce and stir. Continue to heat on saute until bubbling. Press “Warm” on the pot. Plate pork chops and pour the mushroom bacon sauce over the chops
  12. garnish with fresh thyme leaves or fresh parsley.

AIR FRIED CHICKEN CORDON BLEU

INGREDIENTS:

1 lb boneless, skinless chicken breast cut into 4 equal pieces
4 slices Swiss cheese
2 ounces deli ham
1 large egg
1 tbsp water
1/4 cup grated parmesan cheese
1/4 cup bread crumbs
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp dried parsley
1/2 tsp paprika
1/4 tsp ground black pepper
1/4 tsp salt

DIRECTIONS:

To Assemble:
  1. Preheat the oven or the air fryer to the temperature required for your cooking method (see below). Prepare the egg wash by beating the egg and water in a shallow bowl. Prepare the breading station by mixing the bread crumbs, parmesan, and seasonings together. Set aside.
  2. Using a mallet, pound each piece of chicken breast into thin slices, about 1/4-1/2" thick. To keep your work station cleaner, you can place the chicken in a gallon-sized plastic bag while you're pounding it, then carefully remove. Very lightly season chicken with salt and pepper.
  3. Place cheese on top of the chicken breasts – feel free to cut cheese in half or tear into pieces to evenly cover the cheese.
  4. Layer a thin slice of ham on top of the cheese.
  5. Carefully roll the chicken. Once rolled, place seam-side down while rolling the remaining pieces of chicken. As long as the chicken stays seam/ open-side down, the chicken will remain rolled without the need of twine or toothpicks.
  6. Carefully coat each rolled chicken piece in the egg wash, then transfer to the seasoned bread crumbs and coat chicken evenly.
To Air Fry:
  1. Preheat air fryer to 400°F (if your air fryer preheats). Lightly spray the rack/ air fryer basket and the tops of the chicken with nonstick spray to promote better browning. Once chicken is placed inside the frying basket (chicken pieces should not be touching), "fry" for 12-15 minutes. When done, chicken should be crisp, golden brown, and the internal temperature should reach 165°F. Remove, let rest a couple minutes, then serve.

TUPIG

INGREDIENTS:

1 can coconut milk
1 bag of glutinous rice
1 bottle macapuno
1 cup of brown sugar

DIRECTIONS:
  1. Mix together in a bowl.
  2. Divide batter and pack in banana leaves.
  3. Preheat salad master electric skillet at 450F.
  4. Cook tupig each side of tupig for 20-25 minutes uncovered.

AIR FRIED RIB EYE STEAK

INGREDIENTS:

1 (8-16 oz) Rib Eye Steak (1" to 1.25" thick)
1/2-1 tsp Kosher Salt
3/4 tsp Pepper
1/2 tsp Garlic Powder (optional)
3/4 tsp Low Sodium Steak Seasoning(optional)

DIRECTIONS:
  1. Season both sides of the steak with the spices. Then set aside to come up to room temperature. This ensures even cooking, and that it will cook in the times given.
  2. Preheat the air fryer for 3 to 5 minutes at 390°. Make sure the air fryer basket is in there.
  3. Quickly set the steak in the air fryer basket, and then quickly close the lid.
  4. Cook a 1 inch thick 8 oz steak at 390° F for 9 minutes. Cook a 1.5 inch thick 16 oz steak for 12 minutes.* Flip halfway through cook time. Thicker or thinner cuts of steak will require a time adjustment. *Your model of air fryer may give you different results.
  5. Take the temperature of the steak. Then move it to a plate, loosely tent it with foil, and let it rest for 8 minutes before you cut into it.

CLASSIC LASAGNA

INGREDIENTS:

2 lbs ground beef
1 medium onion, chopped
3 cloves garlic, minced
1 Tbsp olive oil
2 15 oz cans tomato sauce
1 15 oz can water, use the tomato sauce can
1 12 oz can tomato paste
1 tsp oregano
1 tsp basil
1 tsp salt
1 tsp pepper
24 oz mozzarella cheese, grated (can use more)
16 oz cottage cheese, or ricotta cheese
1/2 cup grated Parmesan cheese
1 16 oz box lasagna pasta, you will only need about 15 noodles

DIRECTIONS:
  1. Preheat oven to 350°F.
  2. In a large pan, add olive oil, chopped onions and garlic. Saute for 3-4 minutes.
  3. Add ground beef and cook until completely browned, drain fat. Return to pan.
  4. Add tomato sauce, tomato paste, water, oregano, basil, salt and pepper.
  5. Bring to a boil over medium heat, reduce heat to low, cover and cook for approximately 20-25 minutes, stirring occasionally.
  6. Cook pasta according to package directions for al dente, rinse and set aside.
  7. Lightly spray a 14 x 11 1/2 x 2 1/4 baking dish (or two smaller size baking dishes) with a non stick spray then add a small amount of meat mixture in the bottom of dish. Spread around.
  8. Add lasagna noodles (approximately 5, they will overlap onto each other).
  9. Next, spread 1/2 of the cottage cheese on top of pasta.
  10. Spoon 1/3 meat mixture on top of cottage cheese.
  11. Sprinkle with 1/2 the Parmesan cheese.
  12. Next add 1/3 of the mozzarella cheese.
  13. Repeat with another layer of pasta, cottage cheese, meat mixture, Parmesan cheese, mozzarella cheese.
  14. Final layer is pasta, remaining meat mixture and remaining cheese.
  15. Cover with foil, cook for approximately 50-60 minutes. 
  16. Remove foil and cook for an additional 10 minutes.

AIR FRIED CRISPY BREADED PORK CHOPS

INGREDIENTS:

1 pound boneless pork chops , 1/2-inch thick
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
1/2 cup all-purpose flour
1 teaspoon garlic powder , divided
1 teaspoon onion powder , divided
2 large eggs
splash of water
1/3 cup seasoned Italian breadcrumbs
1/3 cup grated parmesan cheese, plus more for garnish
fresh chopped parsley, for garnish

DIRECTIONS:
  1. Season pork chops on both sides with the salt and pepper, set aside.
  2. Set up your breading station with 3 shallow bowls: (a) Bowl 1: whisk together the flour, 1/2 teaspoon of garlic powder, and 1/2 teaspoon of the onion powder; (b) Bowl 2: thoroughly whisk together the eggs, splash of water, 1/2 teaspoon of the garlic powder, and 1/2 teaspoon of the onion powder; and (c) Bowl 3: mix together the breadcrumbs and parmesan cheese. 
  3. Place the pork chops one by one into the flour mixture and evenly coat. Shake off any excess flour and immediately place into the egg mixture, evenly coat. Let any excess egg drip off the pork chop and immediately place it into the breadcrumb mixture and evenly coat, shake off any excess. Repeat with the remaining pork chops.
  4. If your air fryer requires preheating, set it to 400°F for 5 minutes.
  5. Spray the air fryer basket with cooking spray; place two pork chops in the basket or as many as you can fit without them touching. Spray the tops of the pork chops with cooking spray. 
  6. Air fry for 4 minutes, turn them over, spray the top with more cooking spray and air fry an additional 4 minutes or until an internal temperature reaches 145°F.
  7. Serve with a garnish of parsley and more grated parmesan, if desired.

AIR FRIED BACON WRAPPED PORK TENDERLOIN

INGREDIENTS:

1 pork tenderloin
1 pack bacon
1 tbs dijon mustard
1 1/2 tbs honey
pinch of salt and black pepper

DIRECTIONS:
  1. Season tenderloin with salt and pepper blend then cut tenderloin in half.
  2. In small bowl, mix together honey and dijon then spread over the tenderloin.
  3. Lay out 4 strips of bacon side by side then place tenderloin on bacon and wrap around securing each strip with a toothpick. Repeat for other half.
  4. Preheat air fryer to 360F.
  5. Cook at 360F for 15 minutes, flip tenderloin and cook for 10 to 15 minutes more until internal temperature reaches at least 145F.
  6. Let rest for 10 minutes before carving.
