INSTANT POT BEEF AND BROCCOLI

INGREDIENTS:

1 tablespoon canola oil
3 cloves garlic, grated or minced
1 tablespoon ginger, grated
12 oz (340 grams) flank beef steak, sliced into strips or cubes
14 oz (400 grams) broccoli, steamed

For the Sauce:
1/2 cup soy sauce
1 teaspoon brown sugar
1 teaspoon sesame oil
1/2 cup water or beef stock

For the Slurry and Garnish:
1 tablespoon cornstarch mixed with 1 tablespoon of water
1 teaspoon sesame seed to garnish (optional)

DIRECTIONS:
  1. Press on the SAUTE setting on the Instant Pot and heat olive oil.
  2. Saute the garlic and ginger for a minute, then add the beef to brown it. When the beef is browned, add the sauce ingredients and give them a stir. Switch of the saute setting. 
  3. Secure the lid and set the vent SEALING. Select the PRESSURE COOK/MANUAL setting and set the cooking time for 8 minutes at high pressure. The Instant Pot will take around 5 minutes to come to pressure and start cooking. When the cooking program ends, quickly release the steam and remove the lid.
  4. Press the SAUTE setting and add the cornstarch slurry. Stir the sauce until it's thickened. If it's not thick enough, then add one more tablespoon of cornstarch with water mixed together before adding to the pot.
  5. Stir in the cooked broccoli and serve over rice.
  6. Garnish with toasted sesame seeds.

I did not steam the broccoli but left it over for 3 minutes in the pot to be cooked after I added the cornstarch slurry. Also, these ingredients as for small serving so if you wanted more then double or triple the amount of the ingredients.

AIR FRIED ROTISSERIE STYLE WHOLE CHICKEN

INGREDIENTS:

1 5 pound whole chicken, giblets removed
2 tablespoons oil
1 tablespoon salt
1 teaspoon ground black pepper
1 teaspoon garlic powder
1 teaspoon paprika
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/2 teaspoon dried thyme

DIRECTIONS:
  1. Preheat the air fryer to 360F. If you don't have a preheat setting just run the air fryer for 5 minutes.
  2. Combine all of the seasonings with the oil to make a paste and spread it all over the chicken.
  3. Spray the air fryer basket with cooking spray. Place the chicken in the basket breast side down and cook at 360F for 50 minutes. Flip the chicken to breast side up and cook for an additional 10 minutes.
  4. Check to make sure the breast meat has an internal temperature of 165F.
  5. Carve and serve.

I only cook the chicken for 45 minutes breast down and then flip it to the other side and cook for another 15 minutes. I will, however, cook the other side for 20 minutes the next time for a crispier skin.

INSTANT POT PORK ADOBO

INGREDIENTS:

1 lb pork cut into 1-2 inch cubes
1/2 cup Tamari or any soy sauce
3/4 cup apple cider vinegar or any vinegar
6-8 cloves garlic, peeled and crushed
1/2 tsp black peppercorns
1-2 bay leaves
1 lb chicken liver (optional)
1/2 lb sliced mushrooms (optional)

DIRECTIONS:
  1. Place pork, tamari, apple cider vinegar, garlic, black peppercorns, bay leaves in the Instant Pot container.
  2. Add liver and mushrooms, if using.
  3. Cover and select the Meat/Stew setting or Manual mode at high pressure. Set for 30 minutes.
  4. After time is up, let the pressure release naturally.
  5. Serve warm with rice, diced fresh tomatoes or salted egg. Or even some kimchi.

This menu is gluten free which I found in Pinterest and it taste good for us. I did not put liver nor mushrooms as I don't have the ingredients but I put on potatoes after 30 minutes and added another 5 minutes time for it to be cook.

CRISPY AIR FRIED PORK BELLY

INGREDIENTS:

1 kg pork belly
3 cups water
1 tsp salt
1 tsp sugar (optional)

For Skin Rub:
1/2 tbsp vinegar
1 tsp sea salt

For Meat Rub:
1/4 tsp Chinese 5 spice powder
1/4 tsp sea salt

DIRECTIONS:
  1. If there is any hair in the pork skin, scrape it off with a knife. Then wash the pork belly under a tap.
  2. In a pan on medium high, add the water, salt and sugar.
  3. Once boiling, add the pork belly skin side down and cook for 10 minutes.
  4. Once done, remove the pork belly and let it cool on a rack. Pat dry with some paper towel when it is cool enough to do so.
  5. Get a meat skewer or a fork and punch lots of holes into the skin of the pork belly. Do not punch holes so deep that it reaches the meat.
  6. Brush the pork skin with vinegar and then sprinkle half the salt. Let it rest for 10 minutes and repeat the process.
  7. Put the pork belly into the fridge uncovered and allow the skin today for a minimum of 12 hours or overnight.
  8. Take your pork belly out of the fridge and apply the meat rub on the sides and the bottom of the pork belly.
  9. Preheat your air fryer for 5 minutes then cook the pork belly for 40minutes at 200C (392F). I used 390F in my air fryer and started at 30 minutes, added additional 5 minutes for the skin to be more crispier.
  10. Once done, let it rest for15 minutes before cutting.

JOLLIBEE STYLE SPAGHETTI

INGREDIENTS:

1/4 cup olive oil
1 cup chopped onion
2 tbsp minced garlic
1/2 kilo group beef
2 cups sliced hotdogs
1 pack 750 grams spaghetti sauce
1 pc bay leaf
1/2 tsp Italian seasoning
1/2 cup condensed milk
1 pack 500 grams pasta, cooked according to package directions

DIRECTIONS:
  1. In a heavy saucepan, heat oil and saute onions until transparent.
  2. Add garlic and sauce until light brown.
  3. Add ground beef and stir cook until brown.
  4. Pour in spaghetti sauce, hotdogs, bay leaf and Italian seasoning.
  5. Simmer about 5 minutes.
  6. Stir in condensed milk. Mix thoroughly.
  7. Remove from heat.
  8. Toss with cooked pasta gently. Serve.

😍 Jollibbe Style Spaghetti ala Presyosa Ligaya 😍

I used the whole pack of the 1 kilo pasta sauce above, almost a kilo of ground pork and 1 pack or 12 pieces of hotdogs. I also used a magic sarap spice in lieu of the Italian seasoning. My first time cooking of spaghetti is a success especially that it taste like Jollibee. No kidding, try it out. My twins when they grow up will surely love this.

CRISPY AIR FRIED CHICKEN

INGREDIENTS:

For the Marinade:
2 lb bone-in skin-on chicken pieces
1 cup buttermilk
1/4 cup hot sauce (optional)
1 teaspoon EACH paprika, garlic powder, black pepper, salt

For the Breading:
1 cup flour
1/2 cup corn starch
1 teaspoon EACH paprika, garlic powder, onion powder, salt, black pepper
Oil for spraying chicken (Canola or Olive Oil)

DIRECTIONS:
  1. Combine buttermilk, hot sauce and spices for the marinade in a large bowl. Add chicken and mix to combine. Cover and marinade up to 24 hours or use right away.
  2. Pre-heat air fryer to 375F.
  3. In a medium shallow bowl, whisk the flour, cornstarch and spices for breading. Drizzle 2-3 tablespoons of buttermilk batter into the flour mixture and mix it through with a fork.
  4. Working with 1 piece at a time, dredge chicken the flour mixture and press flour on the top chicken to form a thick crust. Transfer chicken to a Pre-heated air fryer in a single layer without overlapping. You may need to work in batches if needed.
  5. Generously spray chicken with oil. Set the air fryer to 30 minutes under chicken function and start. After 15 minutes, flip the chicken and lightly spray the other side with oil. Continue cooking for 10 minutes or until chicken is golden and the internal temperature reaches 165. Repeat with the remaining chicken as needed.

I did not drizzle buttermilk to the flour mixture but have the chicken coated with the dry mixture then to the wet one. Rested for 5 minutes then repeated the procedure again. I  used the chicken function here at 25 minutes at 370F only, flipping half way.

WHITE RICE

INGREDIENTS:

1:1 Ratio of your favourite rice and water

DIRECTIONS:
  1. Measure out your rice using your available scoop and put it into your Instant Pot metal container. Under running water, rinse the rice thoroughly with your hands and then drain water.
  2. Measure out the water using the same scoop and pour it into the Instant Pot metal container.
  3. Place the container inside the Instant Pot, close the lid and lock.
  4. Pressure cook on low pressure for 10 minutes with a natural release with 'keep warm' turned off.
  5. When the rice is done and the Instant Pot has released all the pressure, open the lid and fluff the rice.
  6. Serve immediately.
